Start with the medium tips. Most people stay there.

A good seal feels snug and stays put when you move your jaw. It should not feel like pressure. If the earplug loosens when you talk, size down. If it aches after twenty minutes, size up.

All three sizes are in every box, so trying them costs nothing but a minute.
